Garlic Shrimp with Zoodles

Ingredients

Units Scale
  • 1/2 lb shrimp, peeled & deveined
  • 2 zucchini (2-3)
  • 1/2 cup cherry tomatoes, halved.
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/4 tsp red pepper flakes
  • 1 tsp Italian seasoning or oregano
  • salt & pepper
  • freshly grated parmesan

Instructions

  1. Make the zucchini noodles using a spiralizer and set aside.
  2. Heat 1 tablespoon oil in a large pan over medium-high heat.
  3. Add the shrimp & tomatoes to the hot pan, season with salt and pepper cook for 1 minute.
  4. Add the garlic, Italian seasoning, and crushed pepper to the pan. Cook for another minute per side or until shrimp is light pink and garlic is golden brown. Transfer to a bowl.
  5. Add the Butter and zucchini noodles to the same pan, season with salt and pepper and cook for 2 minutes or until tender.
  6. Return the cooked shrimp to the pan and stir through. Garnished with freshly grated parmesan cheese or/and chopped parsley.
